The versatility of dairy foods

What I particularly like about dairy foods is the versatility, availability and the all-encompassing way they feed you, stop you being hungry and help you keep a flat stomach and healthy gut. A dream food, in other words.

Milk was all the rage when I was a child. We had free school milk. It was seen as a ‘healthy’ food because it was natural. And boy, did it quell those mid-morning playground hunger pangs! By the time I was older and drinking all-milk coffees from the school vending machine, I was hooked. Everybody was dieting in those days: dieting when they scarcely needed to lose more than five pounds, but diet we did. Like maniacs. And with no ill effects as far as I can remember; we drank milky coffees, ate cheese with apples, in moderation of course, and I do believe this is why the generation that grew up in the 1950's and 60's have strong bones and teeth and are generally slimmer than the younger generation.
