Home-made Fast Food Pizza
1. Toast the muffin until golden and leave to cool.
2. Pre-heat the grill to high. Mix the tomato puree and red pesto and spread over the muffins. Heat the butter in a frying pan and cook the onion for 2 minutes, then add the mushrooms and courgette until softened and golden.
3. Season to taste.
4. Divide the vegetables between the two muffin halves and scatter over the Mozzarella or Cheddar cheese over the top.
5. Place under the grill and cook for 4 minutes or until golden and bubbling.
1 english muffin, split in half
1tbsp tomato puree
1tsp red pesto
20g Rachel’s Organic butter
Half small red onion, peeled and chopped
2 button mushrooms, sliced
1/2 small courgette, thinly sliced
A little salt and freshly ground black pepper
50g grated cheddar or mozzarella
