Ingredients

1 bag (100g) fresh watercress, washed
2 tbsp fresh mint
1 tbsp olive oil
Pinch of paprika
Salt & pepper to taste
80g Rachel’s Greek Style Natural Yogurt

Most vegetables can be grilled and cook in no time at all, think about colour and texture. If skewered they are easy to turn whilst cooking. Also cut your vegetables into even pieces will ensure they cook at the same time

Watercress and Mint Marinade

Method

1. In food processor or small chopper take the watercress and mint and chop until fine.

2. Meanwhile in a large bowl mix the remaining ingredients.

3. At this point either use as a marinade or use as a fresh dressing for grilled vegetables.

Try with a couscous salad or with grilled salmon.
